A cool wet summer originally gave us some concerns about the vintage but patience was rewarded with a hot dry harvest season that allowed grapes to ripen fully.
WINEMAKER’S NOTES
Both wineries and growers in Niagara were dealing with significant vine and root damage, at the beginning of the season as a result of wet weather in the fall of 2021 followed by a sudden cold snap. But while the yield was lower than usual, the quality was exceptional. The Cabernet Franc grapes were harvested from our estate and then crushed and allowed to spend 6 hours on the skins for colour and flavour extraction. pressed from the skins and then cold fermented for ten days in stainless steel using white winemaking procedures.
TASTING NOTES
A classic rosé with an elegant salmon pink colour. A crab apple tart notes with cotton candy and a touch of strawberry aromas with soft strawberry flavours. The wine is dry with balance acidity and good weight on the mid palate making it a food friendly wine. Pair with shrimp ceviche, poached salmon seasoned with tarragon or lobster cakes a side salad like feta and watermelon or strawberry and spinach. Will also match with casual fare like white pizza, a turkey burger with guacamole, veggie skewers.
