A cool wet summer originally gave us some concerns about the vintage but patience was rewarded with a hot dry harvest season that allowed grapes to ripen fully. Ripe fruit was crushed and fermented on the skins individually. Fermentation on the skins lasted 15 days then the must was pressed and malolactic fermentation was done in stainless steel tanks. however turned the tables on winemakers in Ontario with a wet humid fall.
Winemaker’s Notes
Harvest was quick in an effort to pick fruit before rains affected the quality of grapes. This wine is back by popular demand, made first as a Nouveau, this vintage was picked along with regular harvest but has the same great flavour profile of this unique grape variety only grown in a handful of vineyards in Ontario.
Tasting Notes
A fruity off-dry white wine with apple strudel, peach and soft mango flavours on the palate. Perfect pairing alongside a holiday ham and apple sauce or serve before a meal with hors d’oeuvres. Will also pair well with white fish, pork and poultry.
