A cool wet summer originally gave us some concerns about the vintage but patience was rewarded with a hot dry harvest season that allowed grapes to ripen fully.
Our half acre block of Semillon vines planted in 2005 and are maturing nicely on the farm. The fruit for this vintage was left on the vine for a time to dry, allowing us to create an appassimento-style wine. The wine was also fermented and aged in older French barriques for 6 months to add a light tannic structure.
This wine has intense aromas of orchard fruit flavours and aromas of peach and pear with notes of honey. A complex and layered wine that will pair with creamy washed rind cheeses like Camembert.
