A slow start to the season with a cool spring but summer brought hot dry weather perfect for grape growing. Mother Nature however turned the tables on winemakers in Ontario with a wet humid fall. Harvest was quick in an effort to pick fruit before rains affected the quality of grapes.
Three tons of fruit were pulled from our regular fermentation process for our classic style Pinot Grigio for the production of the reserve which saw extended skin contact before fermentation. Juice sat on the skins for sixteen hours before pressing to allow for time of extraction of flavour and colour from the skins
A medium-bodied dry white wine with melon and mineral aromas. The palate is rich and flavourful with a long lingering finish. Enjoy with grilled seafood, smoked salmon and vegetable lasagna.
