A cool wet summer originally gave us some concerns about the vintage but patience was rewarded with a hot dry harvest season that allowed grapes to ripen fully.
The wine was left on the skins for 8 hours and gently pressed. We then fermented off the skins, using white winemaking procedures, a slow cold fermentation using no oak. Cabernet Franc.
Floral aromas of rosemary and thyme blended with freshly picked strawberries. Flavours of fresh strawberries, raspberries, blackberries complete this refreshing wine. Pair with rosemary pork tenderloin, salmon, shrimp dishes, grilled pizzas or as simple as a turkey burger.
