This 2015 vintage was a special year for Ferox as it was the very first vintage and wine to go into production. The Merlot and Cabernet grapes were handpicked solely by Fabian & Stephanie on Monday, November 16, 2015 in 12 degrees Celsius sunny weather. Due to the previous winters being extremely cold, this vineyard yielded very low and brought well balanced and ripe fruit. Vineyard yield: 1 bunch/vine
BY FABIAN REIS: Upon harvest, the grapes were hand sorted, gently de-stemmed and transferred into a fermenting vat where it underwent a 2 week cold maceration. This was followed by a 3 week fermentation on skins. The wine was aged in 70% new French oak. Extensive battonage was done throughout wine production to obtain creaminess and elegance. This wine is unfiltered.
