Rare to Niagara, originally from Germany and founded in Weinsberg where Fabian studied winemaking. It is a red varietal with dark skin and is normally picked early in September for table wine as it ripens early. It has floral aromas and dark berry notes.It is extremely rare for dornfelder to be produced into icewine.
Picked -10 degrees in mid-December 2016. Slow barrel fermentation and aged in new French oak for 12 months.
Aromas of rich dark berries and honey followed by a layered palate of candied plum, raspberry jam, a hint of dark cocoa, and cinnamon. The sweetness fades with a port-like finish.
