2016 will go down as one of the hottest, driest of seasons. Canopy management was very important to make sure fruit did not get sunburned and aromatic wines maintained fresh aromas and acidity. Grapes were harvested on October 19, 2016. Ripe, clean fruit was crushed, pressed and inoculated with a selected yeast strain. The fermentation lasted a typical 10 days and the wine underwent 100% malolactic conversion. It was aged in a mix of stainless steel and oak barriques. The final cuvee consisted of 70% stainless aged and 30% barriques aged.
This wine offers aromas and flavours of apple, pear with nuances of citrus as well as vanilla notes due to ageing in oak. The texture is creamy with a nice balanced acidity. Pair with salmon, crab, chicken and shrimp with cream sauces and patés.
