A cool wet summer originally gave us some concerns about the vintage but patience was rewarded with a hot dry harvest season that allowed grapes to ripen fully. Our Baco Noir was harvested on September25th from vines ranging in age from 12 – 25 years.
Winemaker’s Notes
The grapes were crushed and fermented on the skins for 8 days. The wine was aged in older American oak for 5 months to highlight the native fruit characteristics of this wine.
Tasting Notes
The flavours are layered with sweet plum, black cherry with a slight note of leather and dark chocolate. A balanced acidity to dark fruit with lingering fruit tannins on the finish. Great for anything barbecued from grilled red meats to juicy hamburgers. Beef stew and hearty pastas with red sauce will be great options for fall and winter dining.
