A slow start to the season with a cool spring but summer brought hot dry weather perfect for grape growing. Mother Nature however turned the tables on winemakers in Ontario with a wet humid fall. Harvest was quick in an effort to pick fruit before rains affected the quality of grapes.
Winemaker’s Notes
This lot of Pinot was harvested from a four-acre vineyard block planted in 1987. The wine was aged for six months in older French and Hungarian barriques after fermentation and then aged in stainless another six months. This allowed the tannins to soften and the fruit to open up.
Tasting Notes
Light and dark red fruit aromas on the nose with cherry, rosemary and black pepper notes. A firm acidity on the palate makes this an excellent food wine. A natural match with lamb, game and veal or serve chilled with salmon steaks and don’t forget to season with rosemary and black pepper for a perfect match.
