While the season began with a wet cool spring, summer brought typical temperatures across Ontario. July was particularly warm and sunny with intense heat waves and high humidity. Early-ripening grape varieties escaped the wild weather of late fall and the unusual early cold snap in November. Harvest extended into early December, sometimes taking place in the snow.
Winemaker’s Notes
A cool wet summer originally gave us some concerns about the vintage but patience was rewarded with a hot dry harvest season that allowed grapes to ripen fully. Wines were made individually and the final blend was crafted after wines completed malolactic fermentation. The fermentation and aging was done in large stainless steel vats and this was done to allow the fruit components to remain at the forefront of this wine. The blend consists of 70% Gamay Noir and 30% Cabernet Sauvignon.
Tasting Notes
A very fruit forward Cabernet with soft ripe tannins gives us a medium body food friendly wine. The aromas are rich with layers of red and black berry fruit. On the palate, raspberries, cherries, sweet black berry and touch of cassis with subtle spice notes. Goes great with pasta dishes, lasagna, hamburgers and grilled foods.
