A cool wet summer originally gave us some concerns about the vintage but patience was rewarded with a hot dry harvest season that allowed grapes to ripen fully. After harvest grapes were crushed and pressed, selected yeast was used for the fermentation. This edition of the blend of 80% Shiraz and 20% Pinot Noir.
The grapes were hand harvested and 100% of the Pinot Noir and 20% of the Shiraz was allowed to dry in our kilns for 3 weeks. The grapes were crushed and fermented on skins for 14 days. After pressing the wine was moved into new and old French barriques, where the wine completed it alcoholic and malolactic fermentation.
Silky tannins and dark fruit on this full body wine create a long smooth finish. A balanced acidity interplays with black pepper, spice, black cherry, blackberry and chocolate notes. Good for grilled meats, roasts, especially lamb and hearty stews or pastas. Also a nice evening companion when paired with a sharp cheese or dark chocolate.
