Vintage & Viticulture
2015 came in with some unusually and at times brutally cold weather. By April/May the weather normalized and June gave us plenty of rain. The growing season gave us hope with sunny warm weather which ran into harvest time. This allowed us to get good maturation of fruit and the silver lining of the cold winter, less fruit, which meant higher quality.
Varieties were made individually and the blend is made after the wines are completely fermented out. This vintage carries a higher percentage of Cabernet Sauvignon due to the heavy loss of Merlot from winter kill. The final blend is 60% Cabernet Sauvignon, 30% Merlot and 10% Cab Franc and the blend was then aged in French Hungarian and American Oak for 24 months.
This Bordeaux blend displays ripe flavours of red berries, black berries, smoky cedar and a long lasting finish. Firm tannins and ripe fruit will make this an unforgettable wine and a nice candidate for the cellar maturing in another 3 to 5 years. Pair with grilled red meats, roast lamb and grilled vegetables.
"This terrific, robust Niagara red wine blend over-delivers against its price point. Balanced, elegant and full-bodied: a beautiful blend of Cabernet and Merlot from this Niagara winery. Decant 1-2 hours. Pair with hearty meat dishes." nataliemacelan.com
