2014 vintage started with a below norm temperatures from January to April. May came in with more normal temperatures and allowed the vines to settle in. Most of the summer was cooler and wetter which resulted in slow and steady maturation. August and September was back to normal temperatures and allowed the fruit to ripen. Harvest was as late as 10 days.
2015 came in with some unusually and at times brutally cold weather. By April/May however, the weather normalized and June gave us plenty of rain. The growing season gave us hope with sunny warm weather which ran into harvest time. This allowed us to get good maturation of fruit.
After harvest grapes were crushed and pressed selected yeast was used for the fermentation. The fermentation was kept around 12 degrees Celsius to maintain aromatics and crisp acidity. The fermentation was completed in 10 days and further aged in stainless steel tanks. This variety is only grown in a few vineyards in Niagara but it continues to impress us as the vines age.
Gracious floral and herbal notes on the nose with flavours of apple, honey and grapefruit on the palate. The wine also has a rich minerality and refreshing finish. Pair with shellfish like scallops and clams or fritto misto calamari. Also great for vegetarian dishes or mild flavoured white fish such as sole or tilapia.
